I can’t say enough how much I love steaks. One of my favorites has always been Filet Mignon. You can’t get a better steak than one that has been cooked just right. But, we also have to consider what we are going to do with this nice piece of meat- are we going to add a little seasoning, or just go with good old A-1. Well have I have got a steak recipe just for you. I am a big fan of garlic also, I even take those little garlic pills. So why don’t we add a little garlic into our Filet and see how it goes…Here is the recipe:
2 whole heads of roasted garlic
1 cup red whine vinegar
3 shallots, finelly chopped
2 cups chicken broth
4 1-inch thick beef tenderloin steaks
1 teaspoon crushed black peppercorns
Combine: wine vinegar and shallots in a small saucepan
Boil until almost all the liquid has evaporated
Add the chicken broth-boil until you have about a cup left
Squeeze the garlic from the roasted cloves and puree.
Pour in the broth and puree and KEEP WARM
Press the pepper into both sides of the steaks.
Rotate ina Flat Standard Basket for 15-20 minutes.
Now serve, topped with the Garlic and there you have it Gourmet Mignon.
I know what I am cooking tonight and I know exactly where i am going to be getting the steaks from.
